For this entire week, I'm taking a cooking class that focuses on basic cooking skills like how to make stock and how to braise properly. Because my wife is not always happy with pie for dinner.
Yesterday we started off practicing basic knife skills (which I do not possess). The chef-instructor came over and said, "Fresh, you are not using the whole knife. You're only using the top two inches."
I said, "What can I say? I've learned how to work with only two inches."
