Greatest of all time

I had a great time in France. 
 
The best meal we had was at Paul Bocuse's restaurant in Lyon.  He's an icon in the cooking world and both the wife and I were really excited to eat there.  The food was fantastic but the highlight came when Paul himself -- the face I've seen on a million cookbooks, web sites, and even pictures hanging in Manhattan restaurants -- came out of the kitchen to greet his guests.  It was Sunday night so there were only a few tables taken.  I noticed that Paul extended an especially warm greeting to one gentleman at the table next to me.
 
At the end of the night, there were only two tables left: us and the party of four seated next to us.  As my wife went to use the restroom, the employees of the restaurant came, one by one, to the table next to us to greet one of the guests and obtain an autograph.  While this was occurring, the captain came to me and tried to explain in French.  I said, "Je suis desolee monsieur, mais je ne comprends pas."
 
In broken English, the captain smiled and said, "This man, he is the man who makes the circus in France."
 
I smiled and said, "Voila. Bien sur."
 
When the wife came back, she immediately noticed the autograph signing.  I said to her, "He is the man who makes the circus."
