This weekend is my father-in-law's birthday and he requested a Napoleon.
I've never made a Napoleon before, so the wife and I went to a restaurant known for their Napoleon. The filling was not pastry cream. The filling was totally white (no eggs), much thicker than whipped cream but softer than buttercream (mascarpone?), and flavored with a type of liquer. Of course, I asked what is in it but our waitress didn't know. Since then, I have been trying to duplicate that cream at home unsuccessfully.
My father-in-law has a strange sense of humor. He will delight in hearing of how I toiled over the puff pastry dough and made four different kids of cream. Then, as soon as he finishes his slice, he will say, "That was really great. But what I could really go for are some Rice Krispies treats." This may be the first birthday when I just buy a dessert and pass it off as my own.
